Our grill master cooking zarandeado over wood

Our story

A family table facing the fishermen’s boats.

El Zarandeado Nayarita was born from the daily catch and a recipe handed down in Nayarit: the fish split open, rubbed with adobo and slow-grilled over wood, turned in the zaranda (a hinged grill basket) until the skin crackles and the flesh falls apart.

We’re right on the Corral del Risco marina, where the pangas come in every morning. El Capi and his crew welcome you with warm service, generous portions and fair prices.

“From the sea to your table, with the heart of Nayarit.”

The ritual

Wood, zaranda
and patience.

  1. I

    Catch of the day

The fish comes off the marina’s pangas and is butterflied open.

  2. II

    Nayarit adobo

Dried chiles, garlic, spices and a house secret, rubbed on by hand.

  3. III

    Onto the zaranda

Over wood embers, turned unhurried until the skin crackles and smells of smoke.

The full experience

Marietas Islands,
then back to the table.

We head out by boat from our marina to the Marietas Islands. Snorkeling, turquoise water and, in season, whale watching. When you’re back, the zarandeado is already on the fire.
